
As the last few precious weeks of summer wind down, we're soaking up as much beach time, al fresco brunching and backyard barbecuing that we can muster. The cocktail that we featured in our Love Inc. V4 Mid-Century Modern Love inspiration spread (page 24), concocted by Purslane Catering, was like summer in a glass (a very cute geometric tumbler glass). Labeled as an Amarillo Brillante, this tipple is a twist on a tequila gimlet, updated with fresh pineapple juice in place of simple syrup, and bitters for a bright, complex, and refreshing drink. Not a fan of the smokey, full flavor of tequila? This drink can easily be made with gin, vodka or light rum.
Amarillo Brillante
2 parts tequila
1 part pineapple juice
1 part lime
Dash of Angostura bitters
Served in a rocks glass and garnished with a pineapple leaf
